First, you’ll need a Brown Rice Flour Blend. It makes about four cups, you will need:
- 1 1/3 cups brown rice flour
- 1 1/3 cups tapioca flour/starch
- 1 1/3 cups cornstarch
- 1 tablespoon potato flour
Now that you have that all mixed up, it is time to make the actual bread mixture.
Here’s all of the ingredients you’ll need!
- 4 cups Brown Rice Flour Blend (see above recipe)
- 1/3 cup honey
- 2 cups warm water
- 2 teaspoons salt
- 1 tablespoon gluten-free egg replacer
- 1 tablespoon xanthan gum
- 3 large eggs at room temperature
- ¼ cup butter at room temperature
- 2 teaspoons cider vinegar
- 1 package (2¼ teaspoons) active dry yeast (not the INSTANT dry yeast)
- ½ cup powdered milk
Take 2 8-inch bread pans and spray them with cooking spray.
Add 2 cups warm water to the yeast and stir. Set this aside for now.
Mix xanthum gum, the flour blend, salt, powdered milk, and the egg replacer together, then set aside.
Put the butter, eggs, honey, and vinegar together and mix for about 30 seconds. This is best done with a hand mixer.
Add half of the dry ingredients to the wet ingredients that you just mixed. Mix this until blended and then add the rest of the dry ingredients and mix again until blended.
Keep the mixer on a low power and slowly pour in the yeast mixture and warm water, then turn the mixer up to medium or high power and keep mixing for 4 minutes. (The dough should look like thick cake batter after this.)
Place the dough in your greased bread pans. If you want to smooth the top, dip your fingers in water first and then smooth the top. Set aside the pans in a warm place so they can rise, do this for about 50 or 60 minutes. Go ahead and preheat your over to 375 degrees. Once the dough has risen about an inch over the top of the pan, put them in the oven on the middle rake. Bake for about 45-55 minutes, or when the bread’s temperature internally is 200 degrees.
Once it is done, let it cool in the pans for 10 minutes, then remove them and let them cool on a rack. Once the break is completely cool, you can cut the bread.
